a nod for gastropod

Proving once again that Vancouverites are (quite literally) starved for well-designed restaurants serving uncomplicated, delicious food, is the new Gastropod in Kits. 

With a décor reminiscent of Chicago’s famous Avec, (think pale wood, a wall of backlit wine bottles, white granite bar) its design is as refreshing as its dishes, like a risotto so simple it gets all its flavour from butter and fennel stock.

Start with a Gastropod Pink ($9.50) which melds vodka with rosewater and pink Alizé in a spherical glass. Follow up with a trio of B.C. oysters ($12) topped with horseradish snow, made with the gastronaut’s favourite device, the Pacojet. Ling cod in almond foam over crushed baby potatoes ($23) is light and just right.

Wine markups are astonishingly low (though you may find they are out of your selection) and service is just catching up to the crowds (reservations are a must) but give your uniformed waiter a wink and see where it gets you.
