Salad Savour

With the onset of summer, salads take top spot. Here's an easy, crowd-pleasing one we regularly pull out for patio potlucks.

Grape-agon Salad

Ingredients
1 head butter lettuce or mixed greens
1-2 shallots, peeled and thinly sliced
2 cups red and/or green grapes, half-sliced
150 g soft, unripened goat's milk cheese (peppered preferable)
3-4 Tbsp white wine vinegar
Pinch of sugar
Generous handful of tarragon leaves
Olive oil

Method
In a small bowl, let sliced shallots marinate in white wine vinegar with a pinch of sugar. In your large salad bowl, mix together lettuce, grapes, tarragon, and pieces of the peppered goat cheese. Then add in the shallots and white wine vinegar mixture. Top off with a glug of olive oil and toss. Serves four.
